  • 1 onion, chopped 
  • 2 carrots, chopped 
  • 4 celery stalks, chopped 
  • 2 zucchinis, chopped 
  • 1 cabbage (small), chopped  
  • 4 potatoes, chopped 
  • Canned chickpeas, 1/2 cup  
  • 8 cups water 
  • Olive oil, 1 tbsp 
  • Paprika, turmeric, black pepper, and salt, to taste 
  • Fresh parsley and cilantro for best flavor
